      <image:caption>Everyone has different foods that work best for their unique body type. This salad is completely flexible and easy...use whatever you have in the fridge as well as any leftovers. Opt for seasonal, local and organic! 1) Choose a natural source of healthy fat (omega-3's and monounsaturated fats) such as olive oil, avocado, chia seeds and / or wild salmon etc. 2) Add your favorite lean meat or plant based protein such as chicken, buckwheat, tempeh, hemp seeds and / or nuts. 3) Fuel up with a wholegrain or vegetable based carbohydrate like quinoa, wild rice, sweet potato and / or rainbow carrots.       <image:caption>Homemade Nut Milk Long gone are my dairy consuming days and my overall health is thanking me very much for that. Modern dairy is no longer produced the way we would like to imagine (with happy cows freely roaming grassy fields). The cows are all too commonly cruelly confined in small areas with poor sanitation, fed an unnatural diet to fatten them up, given antibiotics and hormones to keep them alive and produce excessive amounts of milk...and the list goes on. The quality of their milk is extremely poor and can be detrimental to our health. Also, our adult bodies aren't supposed to process milk at all, as we lack the enzyme "lactase" that helps digest it, let alone from the milk of another animal. Dairy creates an acidic environment in the body, which can lead to an array of health problems from inflammation, leaky gut, acne, allergies and excessive amounts of mucus production. Many people who find it hard to digest grains or gluten also react to the proteins found in milk in similar problematic ways. I learned to make my own homemade nut milk when I realized that the store bought non-dairy milk versions were highly processed and not even close to being healthy. They contain many additives such as sugar, preservatives and synthetic vitamins that cannot be assimilated properly by the body and can potentially build up to become toxic. On that note, I'm sure you will find this video helpful when you attempt to make your own delicious, creamy and nutritious nut milk at home. Let me know how much you like it once you've tried it! ENJOY!!! (Note: choose whatever nuts work for you. I am currently sensitive to almonds, pecans and walnuts so I love to rotate or mix up brazil nuts, hazelnuts and / or cashews. If you live in Australia, local macadamias could be an interesting choice.) WHAT YOU NEED: Nut Milk Bag (order online, get from Whole Foods $10 or at a health food store) Strainer to drain and rinse pre-soaked nuts Large bowl or something to squeeze nut milk into Mason jar or similar for storage / refrigeration Quality blender 1 cup raw nuts (soaked overnight in filtered water) 3 cups filtered water 2 teaspoons of vanilla extract 2 medjool dates Cinnamon to taste 1 pinch of sea salt (For extra sweetness: you can experiment with adding an extra date or a dash of honey.)
